There's something to be said for a good old-fashioned pumpkin pie. My version starts with pumpkin purée, brown sugar, warm fall spices, and a touch of molasses for depth. I gently cook the pumpkin to concentrate its flavor, then bloom the spices before bringing everything together into a smooth custard.

During recipe testing, I compared evaporated milk with heavy cream and found a clear winner. Heavy cream made a rich custard, but it also muted the pumpkin and spices. Evaporated milk delivered the creamy texture I wanted while letting those flavors shine. Sometimes the traditional approach really is the best one.
