Classic Bakery-Style Brownies

Homemade bakery-style chocolate brownies with crackly tops and fudgy centers

Crackly tops. Fudgy centers.
Better than the bakery.

These Classic Bakery-Style Brownies have everything a great homemade brownie should: crisp edges, rich chocolate centers, and that shiny, crackly top. Made with melted semisweet chocolate, cocoa powder, brown sugar, and plenty of butter, they deliver deep chocolate flavor without being overly sweet.

The secret is in the combination of ingredients and a little attention to technique. Melted chocolate gives the brownies their rich, fudgy texture, while cocoa powder adds another layer of chocolate flavor. Whisking the eggs and sugars helps create that signature crackly top, and folding the flour in gently keeps the brownies tender.

Baked in a 9×9-inch pan and cut into 16 generous squares, these are the kind of brownies that disappear from the plate before anyone asks for the recipe.

What Makes These Brownies Different?

  • Two forms of chocolate. Melted semisweet chocolate and cocoa powder create a rich, chocolate-forward brownie, with chocolate chips for extra pockets of chocolate.
  • Butter and brown sugar. Plenty of butter delivers richness, while brown sugar adds moisture and a satisfying chew.
  • That bakery-style top. Whisking the eggs and sugars helps develop a shiny, delicate crust that cracks when sliced.

Before You Bake

Use the right pan. A 9×9-inch metal baking pan produces the intended thickness and baking time. A different pan size or material may require adjustments.

Bring the eggs to room temperature. They’ll incorporate more easily into the sugar mixture and melted chocolate.

Don’t overbake. Look for set edges and a few moist crumbs on a toothpick. The center will continue to firm up as the brownies cool.

Ingredients

Brownie Batter
  • 170 g unsalted butter 12 tbsp
  • 113 g semisweet chocolate chopped (4 oz)
  • 150 g granulated sugar ¾ cup
  • 150 g packed light brown sugar ¾ cup
  • 3 large eggs room temperature
  • 2 tsp vanilla extract
  • 60 g natural unsweetened cocoa powder ¾ cup
  • 120 g all-purpose flour 1 cup
  • ½ tsp baking powder
  • ½ tsp kosher salt
  • 150 g semisweet chocolate chips ¾ cup

Instructions

Prepare the Pan
  1. Preheat the oven to 350°F (177°C). Line a 9×9-inch baking pan with parchment paper, leaving enough overhang on two sides to lift the brownies out after baking.
Melt the Butter and Chocolate
  1. Combine the butter and chopped semisweet chocolate in a microwave-safe bowl. Microwave in 20–30-second intervals, stirring after each, until completely melted and smooth.
  2. Let cool for 2–3 minutes.
  3. Man-Made Tip: Use chopped chocolate from a bar for melting. Chocolate chips are better saved for the batter because they're formulated to hold their shape.
Build That Crackly Top
  1. In a large mixing bowl, vigorously whisk the eggs, granulated sugar, and brown sugar for 2–3 minutes, until slightly thickened and lighter in color.
  2. Whisk in the vanilla extract.
  3. Man-Made Tip: Don't rush the whisking. This step helps develop the thin, shiny crust that gives bakery-style brownies their signature crackly top.
Bring on the Chocolate
  1. Slowly whisk the melted butter and chocolate mixture into the eggs and sugars until smooth and glossy.
  2. Fold, Don’t Beat
  3. In a separate bowl, whisk together the cocoa powder, flour, baking powder, and salt.
  4. Gently fold the dry ingredients into the chocolate mixture with a rubber spatula just until combined.
  5. Fold in the semisweet chocolate chips.
  6. Man-Made Tip: Once the flour goes in, put the whisk away. Overmixing can make brownies tough instead of tender.
Bake Until Just Set
  1. Spread the batter evenly into the prepared pan.
  2. Bake for 30–35 minutes, until the edges are set, the center still looks slightly soft, and a toothpick inserted near the center comes out with a few moist crumbs.
  3. Man-Made Tip: Don't wait for a completely clean toothpick. The brownies continue setting as they cool, and overbaking will dry out the center.
Cool, Slice, and Serve Warm
  1. Let the brownies rest in the pan for 20–30 minutes so the center can set enough to slice. Lift them out using the parchment overhang, cut into 16 squares, and serve warm.
  2. Man-Made Tip: For picture-perfect bakery squares, let the brownies cool completely before slicing. For everyone else, grab a plate while the chocolate is still warm and gooey.

Notes

Cocoa powder: Use natural unsweetened cocoa powder for this recipe. Dutch-process cocoa is featured in a separate Man-Made Pies brownie recipe.
Storage: Store tightly covered at room temperature for up to 4 days, or freeze for up to 3 months.
Serving: Enjoy at room temperature for a firm, chewy texture, or warm briefly for a softer, more melted chocolate center.

Frequently Asked Questions

Whisk the eggs and sugars thoroughly before adding the melted chocolate. This helps develop the thin, shiny crust that gives bakery-style brownies their distinctive finish.

Fudgy brownies generally have a higher proportion of fat and chocolate relative to flour, creating a denser, richer center. Cakey brownies are lighter and more aerated. These brownies fall on the fudgy side, with crisp edges and a little chew from the brown sugar.

Even a pie guy needs a good brownie recipe. These are built around the same principles as my pies: real butter, quality ingredients, straightforward techniques, and a finished dessert worth sharing.
