Ingredients

  • 85 g unsalted butter
  • 60 g neutral vegetable or canola oil
  • 75 g Dutch-process cocoa powder
  • 1 tsp espresso powder
  • 200 g granulated sugar
  • 50 g light brown sugar
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • 63 g all-purpose flour
  • 8 g cornstarch
  • ½ tsp kosher salt
  • 170 g semisweet chocolate chips

Instructions

Prepare the pan
  1. Preheat oven to 325°F. Line a 9 × 9-inch light-colored metal baking pan with parchment paper, leaving some overhang to help lift the brownies out after cooling.
Bloom the cocoa
  1. Place the butter in a microwave-safe bowl and microwave in short intervals until melted. Add the vegetable oil and stir to combine. If necessary, microwave for another 10–15 seconds until the mixture is warm but not sizzling.
  2. Whisk in the Dutch-process cocoa powder and espresso powder until smooth. Set aside to cool slightly.
Beat the eggs and sugar
  1. In the bowl of a stand mixer fitted with the paddle attachment, combine the granulated sugar, brown sugar, and room-temperature eggs.
  2. Beat on medium-high speed for 3–4 minutes, until thickened, lighter in color, and well combined. Add the vanilla extract and mix briefly.
Combine the mixtures
  1. With the mixer running on low speed, slowly add the warm cocoa-butter-oil mixture. Mix until smooth and glossy, scraping down the sides of the bowl as needed.
Add the dry ingredients
  1. In a separate bowl, combine the flour, cornstarch, and salt. Stir until evenly mixed.
  2. With the stand mixer running on low speed, gradually add the dry ingredients, about one spoonful at a time. Mix just until incorporated, avoiding overmixing.
  3. Add the semisweet chocolate chips and mix briefly on low speed until evenly distributed.
Bake the brownies
  1. Spread the batter evenly in the prepared 9 × 9-inch pan.
  2. Bake at 325°F, beginning to check at 25 minutes. The brownies are ready when the edges are set and a toothpick inserted near the center comes out with moist, fudgy crumbs rather than liquid batter.
  3. Man-Made Tip: Don't wait for a completely clean toothpick. That usually means the brownies have baked too long.
Cool and cut
  1. Cool in the pan for at least 2 hours before cutting. For especially clean squares, refrigerate for another 30–60 minutes after cooling.
  2. Lift the brownies from the pan using the parchment overhang and cut into 16 squares.

Notes

Use a light-colored metal 9 × 9-inch pan for the most predictable baking results. Dark metal or glass pans may require adjustments.
Beating the eggs and sugar in a stand mixer with the paddle attachment helps develop the shiny, crackly top.
Begin checking at 25 minutes. The final baking time for the 9 × 9-inch pan has not yet been confirmed.
Allow the brownies to cool completely before cutting for the best texture and cleanest slices.
